Gluten free, diary free, sugar free banana and vanilla pancakes

Trying to eat a bit healthy this Saturday morning I thought I would play around with a oat pancake recipe I came across a couple of weeks ago. Its almost guilt free eating and perfect for when you are hosting a brunch!

Ingredients

1 ripe banana
1/3 cup gluten free flour
1/3 cup almond flour
1/2 cup gluten free rolled oats
1/4 teaspoon vanilla
1 egg
1 tablespoon olive oil
1/2 teaspoon vanilla
1/4 teaspoon baking powder
1 teaspoon maple syrup
3/4 cup almond milk
1/4 teaspoon salt

Method

1. Mash the banana in a bowl and add the egg and about half of the almond milk. Mix well.
2. Add all the dry ingredients and mix well until all the ingredients are combined.
3. Add the olive oil, vanilla, maple syrup and rest of the almond milk and mix again.
4. Leave aside for about 20 minutes.
5. Heat up a pan with a little olive oil and fry the pancakes just like you would normal pancakes.
6. Serve warm with some maple syrup!

Try swapping out the banana for some grated apple or crispy bacon!
