Hob nobs

I loved my stay in the US but I did miss some British goodies! Hob nobs is definitely one of them. They are harder to find in the US and I decided to make my own. Here is a throwback recipe for a delicious tea time biscuit perfect for dunking!!

Ingredients

-150 grams of self raising flour (if you don't have self raising flour, you can use 150 grams of plain flour mixed with 2 teaspoons of baking powder)
-150 grams of rolled oats (I used quaker instant oats)
-130 grams of caster sugar
-150 grams unsalted butter
-1 tablespoon golden syrup
-1 tablespoon hot water
-1/2 teaspoon of bicarbonate of soda

Method

1. Pre-heat oven to 180C. Mix all the dry ingredients together.

2. In a pan, heat the butter, water and golden syrup together. Once melted pour the mix into the dry ingredients together.

3. Mix well until it resembles coarse bread crumbs.

4. Shape into balls and place on a baking sheet lined with parchment paper or silicone sheet.

5. Bake for 10 to 12 minutes. It should be a golden colour when you take it out. Leave to cool.

6. These biscuits are not chewy. They should be crisp once cooled.


For a twist add one and half teaspoon of ginger powder to the mix for gingery biscuits.
