Raisin pecan oat bread

This recipe is a slight modification of an oat bread recipe. The original recipe called for a bread maker but I don't have one so its been modified a bit. I also added raisins and pecans. Its great with butter or as French toast!

Ingredients:

1 1/4 cups water
2 tablespoons butter (melted and cooled)
1 teaspoon salt
3 cups all purpose flour
1/2 rolled oats
2 tablespoons golden syrup
1 1/2 teaspoons active dry yeast

Process:

1. Mix the water, yeast, butter and golden syrup in a bowl until the yeast is mixed in. Set aside for a couple of minutes.

2. Mix the flour, oats and salt. Add the yeast mix to the dry ingredients and knead well. I used a mixer  for about 7-8 minutes. The dough is quite sticky.

3. Leave in a warm place to rise until almost double in size. 

4. Punch down and add the raisins and pecans. Knead a little until everything is evenly distributed.

5. Shape into a loaf and place in a loaf tin lined with baking paper. Leave to rise again for about 30 minutes.



6. Bake at 180C for 35 minutes or until the loaf sounds hollow when tapped. 

I find that unlike store bought bread homemade bread doesn't seem to stay fresh for very long. So I use this bread for french toast and its great! The raisins and pecans add texture and flavour to french toast.  This bread freezes well and is just as soft when toasted!
