Chili Cheesecake

This recipe is inspired by my flatmate. I loved cooking for her because even if the food wasn’t exactly as it was meant to be, she always gobbled it up with a grin. One lazy afternoon, we were parked on the sofa, watching Law & Order: SVU marathon, eating cheese with chilli jam and digestives (we had run out of crackers) when inspiration struck! What if I could solve the age old conundrum between getting a cheese board or dessert – what if I could have both! Chili Cheesecake! This is not a tortilla cheesecake, it’s a slightly different take on items we normally put together anyway – just presented differently! This can be made a couple days in advance and you just add the topping before serving. Its great dessert to serve at home and it travels well too! I love the autumnal colours and its a perfect dessert for Thanksgiving and your holiday parties!

Ingredients
400 grams cream cheese
250ml whipping cream
3 Tbs caster sugar
4 Tbs Chili Jam (mild)
2 Tbs water
200 grams digestives or graham crackers
100 grams melted butter 


Process

1. In a food processor blitz the biscuits with the butter. I like my base to have a bit of salt so if you use unsalted butter, add a pinch of salt.




2. Line the base of the pan with this “buttery biscuit base” (If you watch Masterchef UK- You know what I am talking about). Refrigerate for at least 2 hours.
3. In two separate bowls, whip the cream cheese until light and separately whip the cream and sugar until stiff peaks form. 
4. Mix a little bit of the whipped cream into the cream cheese. Once this is thoroughly mixed in, fold in the rest of the whipped cream.


5. Layer this over the biscuit base and leave in the fridge until you are ready to serve. 


6. Just before serving, heat the chili jam and water in a pan until the jam melts. Drizzle over the cake or each slice before serving. Option to layer the jam when its cooled a little bit over the cheesecake and refrigerate again. 


Be careful while pouring the jam over the cake as you don’t want the filling and the topping to mix together. It’s still delicious but it does not look pretty!
