Balsamic and red wine glaze



So the inspiration for this recipe comes from my sister (check out her blog here). My sister made me this awesome duck leg and I tweaked the glaze recipe a bit. This works great with pork belly or duck legs or even drizzled over a pear and walnut salad. Check out how to use this glaze with duck legs here.

Ingredients

3/4 cup red wine
1/4 cup mirin (this is a Japanese sweet wine)
1/4 cup balsamic glaze (you can use balsamic vinegar and reduce it to a syrup with a one tablespoon of brown sugar. I prefer to buy a bottle of balsamic glaze for quick drizzle over salads or pizzas)
1 Tbs sugar (brown or white)
1/2 an orange
1/2 a lemon
1 whole dry red chilli or 1/2 tsp of chilli flakes

Process:

1. Put the red wine in a pan and bring to boil until the alcohol evaporates. You should be able to smell the alcohol as it evaporates.

2. Add the sugar, balsamic glaze and mirin. Bring to boil and reduce to simmer until it thickens. Once it thickens and reduces by 2/3 add the juice of one orange and the 1/2 tsp of red chilli flakes. Take off the heat and leave to cool. Add the lemon just before using.

3. Taste and adjust the seasoning. If you want it spicy use more red chilli.

Top tip: This a sweet glaze and it goes well with vanilla ice cream and over strawberries too (it sounds crazy and tastes delicious). Try it drizzled over a caramelised onion and brie tart for a sweet and spicy twist!
