Kasturi Meethi Chicken Wings

These little bits of deliciousness are usually made out of boneless chicken thigh or breast meat. I only had chicken wings so I gave it a shot. You can use chicken breast or thigh meat if you prefer. Kasturi Meethi or fenugreek leaves are used extensively in Indian cooking They have a wonderful aroma and a slightly moorish taste. Believe me, these are far more delicious than the same old chicken tikka kebabs and make wonderful appetisers for a large number of guests! You can also serve these with rice or naan. Just a bit of a twist on an old Indian favourite.

Ingredients

1/2 Tbsp cumin
1/2 tsp cardamom
1/2 tsp cayenne pepper
1 Tbsp garlic paste
1 Tbsp ginger paste
1 Tbsp lime juice
1/2 Tbsp white vinegar
1 Tbsp greek yogurt
1 Tbsp ghee/clarified butter
1 Tbsp Meethi leaves (dried fenugreek leaves)
1/2 Tbsp garam masala
8-10 chicken wings
salt to taste

Process

1. Mix all the ingredients together (except the ghee) and the juice of half a lime.
2. Add the chicken and marinate for at least 5 hours or overnight.
3. Pre-heat oven to 400 F.
5. Put the chicken in the oven for 10 minutes at reduce to 370F for another 25 minutes or until cooked.

Alternatively - grill the chicken on a barbeque until cooked.

Serve hot and drizzle the ghee over the chicken just before serving.
